Poached Egg With Avocado Toast Recipe

Today I want to share one my breakfast favorites – poached egg with avocado toast. Lately, I’ve become totally obsessed with avocado (luckily we have very good ones in Spain!) and include them to all my meals. A poached egg is one of the healthiest options to cook eggs and it goes so well in combination with bread and avocado. Plus the recipe is so incredibly simple that you will spend only 5-7 minutes to prepare it!

Here it is:

Ingredients:

  • 2 eggs
  • 2 slices whole grain bread
  • 1/3 avocado (usually I cut it in half but don’t use all of it. okay fine maybe I do.)
  • 2 tablespoons goat cheese
  • salt and pepper for topping
  • spinach leaves
  • 2 tablespoons of olive oil
  • 1 tomato for serving

Instructions

  1. Add a tablespoon of vinegar to a pot of water and bring it to boil (vinegar will help the eggs stay together). Drop two metal rims of masons jars to the bottom of the pot. When the water starts to boil turn off the heat and crack the eggs into each rim (this will prevent them to fall apart while cooking). Cover the pot and poach for 5 minutes for semi-soft yolks (if you like liquid yolks 4 minutes will be enough).
  2. Toast the bread and cut the avocado in thin slices. Pour a little bit of the olive oil on the toasted bread, put spinach and then avocado. When eggs are cooked, carefully place them with spatula on the top of your toast. Sprinkle with goat cheese, salt, and pepper. Serve with the fresh tomatoes.
