  • 2 tsp. freshly chopped thyme
  • Freshly ground black pepper

To start, preheat your oven to 375 °F (or 190 °C). Whisk together your butter, garlic, vinegar, and thyme in a medium bowl.

Preheat your oven to 425 °F (or 220 °C). Set your sweet potato slices in a large bowl. Fill the bowl with cold water and leave your potatoes to soak for at least 30 minutes.
Drain the bowl and use paper towels to dry your potatoes thoroughly.
