Ratatouille: Fast And Easy Recipe
I love vegetables! Besides, I love them in any form – raw, roasted, baked, grilled, etc. I love all of the vegetables – potatoes, tomatoes, cucumbers, and especially I love aromatic herbs. I can’t imagine my lunches and dinners without them, so this recipe of Ratatouille is my favourite. I know there are many variations of it, I have created my own, which is very easy to make and very fast as well – altogether it took me around 40 minutes to prepare it. So here is the recipe:
Ratatouille Recipe
- 1 medium eggplant
- 1 zucchini
- 2 onion
- 2 carrots
- 2 cloves of garlic
- 1 sweet pepper
- 4 tomatoes
- 3 table spoons of olive oil
- 100 g basil
- salt and pepper

Prepare and wash all the vegetables. Remove the skin from onioin, garlic and carrots.

First prepare the sauce. 2 tomatoes, 1 onion, 2 cloves of garlic and 2 carrots should be finely chopped. From tomatoes, you first need to remove the peel, to make it easier place them for 1 minute into the boiling water. Heat the pan with 1 table spoon of olive oil. Put all the ingredients and fry them until cooked. Add 2 table spoons of water, salt, coriander, basil and pepper. Stir, hold the pan on the stove for half a minute and remove from heat.

Now splice all vegetables in thin circles – eggplant, zucchini, bell pepper, tomatoes, onions

Pour 1 table spoon of olive oil into your baking form and then add half of the sauce on the bottom of it. Start to put vegetables in rows.

Sprinkle with salt, pepper and olive oil. Add the remaining sauce on the top and close your form with aluminium foil. Place in the preheated to 180 degrees oven. Cook for around 30 minutes until all vegetables are soft (but not more than 1 hour).

Ratatouille is ready for serving!
