Croquettes With Chicken Recipe

Croquettes or croquetas is one of the most popular snacks in Spain. No wonder, they are easy to make at home and delicious. There are multiple varieties of croquettes, here is the recipe of one of my favorite – with chicken.

Ingredients

  • 75 g of flower
  • 400 ml of the whole milk
  • 20 ml of the extra virgin olive oil
  • 2 spoons of butter
  • 1 pinch of nutmeg
  • Salt and black pepper
  • 1 onion
  • 250 g of chicken (fried)
  • For the batter: 100 gr. of breadcrumbs, 3 eggs.
  • Olive oil for frying

Preparation of the base of croquettes

  • For the filling I took advantage of a couple of leftover chicken breasts, which I had grilled.
  • Cut them into small pieces, to your liking but no too big.
  • Chop the onion in fine brunoise, and sauté for 5 minutes (over medium heat) in a pan, with a little extra virgin olive oil.
  • Add the chopped chicken, mix and season to taste. Cook a couple of minutes all together.
  • Now we go with the bechamel, one of the keys of some very tasty croquettes.
  • Make the bechamel, cold, add the reserved filling and mix well. Mix it in circles, so that it is a homogeneous mixture without lumps.
  • Grease a dish with butter and sprinkle the base with flour.
  • Put the dough of the croquettes, spread it and cover with a transparent film. In this way we will dry the surface while resting cold.

Cooking of croquettes

  • In order to handle the dough with guarantee, it needs to be cold for several hours, inside the refrigerator.
  • The recommendation is to leave it done the day before, so that it cools for at least 12 hours.
  • For the breaded croquettes, you can shape it in a traditional way. With the help of two spoons or make them spherical, helping you with your hands.
  • Beat the eggs, and pass the croquettes through it. From here directly to the breadcrumbs and reserve on a plate or dish.
  • You place the croquettes apart and leave them in the fridge for at least an hour.
  • Fry them in very hot olive oil, in batches of four or five at a time, until they are golden brown on all sides.
  • Serve with some fresh vegetables and mushroom sauce
