The Easiest Way To Cook Mussels

What a beautiful evening here in Marbella today! I decided to enjoy the fantastic warm weather on my sun terrace and cooked this simple yet so delicious dinner.

I am a seafood lover so whenever possible I try to cook it. An amazing thing about Marbella is that you can get the freshest and tastiest fish and seafood at a very affordable price.  Today I got these delicious mussels which I cooked in wine and accompanied them by fresh asparagus, also fried.

Whenever you shop for mussels I recommend that you ask the vendor for “rock mussels” – these are the ones that grow naturally in the sea. Comparing to those produced by factories they have more delicate and soft taste as well as the unique flavor of the sea that nothing can compare to. How to know if the mussel is fresh? Partially open shell is usually a sign that mussel can be bad. Pick only those which are completely closed.

Here is how I cooked them:

Ingredients:

  • 1 kg of fresh mussels
  • half glass of extra virgin olive oil (it should cover your saucepan for approximately 1 cm)
  • 3 or 4 cloves of garlic
  • 1 teaspoon of sea salt and black pepper for seasoning
  • 2 glasses of table white wine

Serves 2 persons. Preparation time – 10 minutes

Instructions:

Smash garlic and put it in the olive oil. Bring it to boil and add mussels. Stir them – at that moment the mussels will be sizzling as if saying “we want wine!” – so it’s time to pour the wine! Add salt and pepper. When mussels open it means that they are ready!

As for the asparagus, I cooked it the same quick and easy way as mussels – just fried in the olive oil together with garlic for about 10 minutes.  Added some sea salt and pepper for seasoning and that’s it!

Another thing I did today is this amazing cocktail with cava and blackberries.

Here is how I made it:

Smashed around 10 berries and mixed them with sugar and water. Brought to boil and reduced the fire. Cooked for around 5 minutes to make a syrup. Put syrup in the champagne glasses and added cava.

Cocktail is ready and it is time to enjoy the best city in the world!
