Moroccan Style Chicken With Couscous
Today I would like to share with you a very special recipe, that I personally loved – Moroccan style chicken with Couscous. It is not so difficult to make but requires lots of ingredients and spices to make it juicy and flavored. You need a bit of patience too as the chicken needs to be well marinated.
This dish was meant to be for a large group of people (8) – so if you don’t need that much simply divide all ingredients in two.
Ingredients:
- 2 chickens
- 2 large onions
- 4 ripe tomatoes
- 1 glass of wine
- 1 glass of extra virgin olive oil
- 100 grams of dry apricots
- 100 grams of dry plums
- 200 grams of almonds
- 4-5 cloves of garlic
- 100 grams of fresh parsley
- Moroccan spices mix
- Black pepper
- 1kg of Couscous
Preparation
Cut the chicken into pieces and place in a large bowl for marinating. Add olive oil, crushed garlic, wine, сhopped parsley, black pepper, Moroccan spices.
Mix well and leave for at least 2 hours. The meat would be even more tender and juicy if you leave it to marinate for the night.
Place the mixture to the large saucepan and add chopped onions and tomatoes.
Cook everything for about 15 minutes. In the meantime fry almonds separately and then add to the chicken together with dry apricots and plums. Mix everything and cook for another 5 minutes. Ready!
Ideal side dish for this chicken is couscous. To prepare it put couscous in a large pan and fry with a little bit of olive oil and salt. Add water following the instructions for proportions on the pack. Cover and leave to rest for about 5 minutes. Serve the chicken together with couscous.
