Christmas Chocolate Cake

Last weekend my friend photographer Olga Shangina and I decided to cook a cake! This turned out to be a perfect dessert recipe for Christmas holidays – easy to make, fast and very delicious.
Here is how to make it:
Preheat oven to 175° (350F). In the meantime melt 250 g of butter with 250 g of chocolate in a saucepan at low heat. Add 1/3 cup of espresso.
In a separate bowl whip 4 eggs, 3/4 cup of sugar and 1 tsp vanilla sugar until the mixture becomes fluffy. Pour chocolate mixture into the eggs mixture and stir until smooth and add a pinch of salt. Pour everything into a pan covered with baking paper and put into the oven for 40-45 minutes. Serve with whipped cream and some powdered sugar.
Here is the full list of ingredients that we used:
250 g of butter
250 g of dark chocolate (70%)
1/3 cup of espresso
4 large eggs, at room temperature
3/4 cup of granulated sugar
1 tsp vanilla sugar or 1/4 tsp vanilla powder
pinch of salt
whipped cream and powdered sugar for serving.
After reading this recipe you probably thought that I forgot to mention flour – in fact, I didn’t! This is the flourless cake which makes it very sticky and chewy which I personally loved.
For me, it was also the first experience of styling food for a professional photo shoot. I used fir branches, cinnamon sticks and rowanberry for decorations to make it look festive and joyful.
